Recipe!! White Choc Strawberry Cheesecake


Martha has finally parted with her recipe for the much loved Baked Cheesecake. We have had so many requests for the recipe, so here it is.


200g white chocolate

875g cream cheese

1 1/3 cups caster sugar

1/2 cup thickened cream

4 eggs

2 Tablespoons amaretto

125g amaretto biscuits, crushed

400g fresh strawberries

1/4 cup pure icing sugar, sifted

1 tsp ground cinnamon


Step 1. Preheat oven to 160 degrees celsius, grease 24cm springform tin & line with baking paper. Chop choc & melt in pan over boiling water. Sit aside to cool to lukewarm.


Step 2. Chop cream cheese & put in large mixing bowl, beat until smooth, then add caster sugar & cream. Beat for 1 - 2 mins. Lightly beat eggs & add to bowl of cream cheese along with amaretto liqueur & cooled choc. Beat for 1 - 2 mins until well combined. Spoon half of the mixture into prepared tin. Smooth the top & sprinkle with the crushed biscuits.


Step 3. Wash the strawberries in cold water, drain & pat dry. Cut strawberries into quarters, (or halves if small) and scatter across the layer of biscuits.


Step 4. Spoon the rest of the mixture over the top of strawberries & biscuits, smooth over carefully. Place tin on baking tray and bake for 40 - 50 mins or until just set. Leave on wire rack to cool and refridgerate for several hours or overnight. Dust with icing sugar & cinnamon and add a fresh strawberry before serving.


So there you go, a yummo baked cheesecake in four easy steps!! Enjoy!!
